We trim the Brisket leaving 1⁄4" of savory fat layer, keeping it moist and ready for our dry rub and we let it get all good and happy about 36 hours, then into the smoker low-n-slow for 13-14 hours until it melts in your mouth, hand carved and served with our Original BBQ sauce
